Full Irish Breakfast with Boxty – The Ultimate St. Paddy’s Day Hangover Cure

A Full Irish Breakfast isn’t just a meal—it’s an experience. Whether you’re gearing up for a big day or recovering from a long night, this hearty plate of crispy boxty, sizzling bacon rashers, sausages, black pudding, eggs, and more is exactly what you need.

Why a Full Irish Breakfast?

St. Patrick’s Day celebrations can get a little lively, and the morning after often calls for something satisfying, greasy, and comforting. Enter the Full Irish Breakfast—packed with protein, carbs, and just enough freshness to balance it all out. This isn’t just food; it’s recovery fuel.

What Makes a Full Irish Breakfast?

A proper Full Irish Breakfast includes:

  • Boxty: Traditional Irish potato pancakes, crispy on the outside and tender inside.

  • Bacon Rashers: Thick-cut back bacon, cooked until golden and crisp.

  • Sausages: Preferably Irish-style, but any good breakfast sausage will do.

  • Black & White Pudding: Black pudding is made with pork, oats, and blood, giving it a rich, earthy flavor. White pudding is similar but without the blood, making it milder and just as delicious.

  • Eggs: Typically fried, but you can prepare them your way.

  • Mushrooms & Tomatoes: A little veg to round out the plate and add some freshness.

  • Toast or Soda Bread: Perfect for soaking up all that goodness.

  • Tea or Coffee: Because no Irish breakfast is complete without a strong cup of something to wash it down.

The Key to a Perfect Hangover Cure

This breakfast is salty, crispy, buttery, and packed with protein, making it the ultimate St. Paddy’s Day recovery meal. The boxty provides much-needed carbs, the eggs and meats bring protein to get you back on your feet, and the mushrooms and tomatoes offer a little balance. Plus, if you’re really leaning into the theme, another Guinness wouldn’t be out of place alongside this feast.

Adding a Newfoundland Twist

Being a Newfoundlander with strong Irish roots, I had to add a little something extra—fried bologna, also known as Newfie steak. It’s a staple back home, and honestly, it fits right in with everything else on this plate.

So, if last night hit hard, this breakfast is here to bring you back to life—no luck of the Irish needed.
