Greek Roasted Potatoes With Tomato Sauce

Greek Roasted Potatoes With Tomato Sauce is a super easy and amazingly tasty dish to have around the holidays or in the winter months. It is a very comforting and warming dish. Use as a side but this could definitely be a main dish as well!


Ingredients:

 

2 lbs Potatoes (cubed to 1/2 inch bites)

1/2 cup Olive Oil

Salt and Pepper

1 tsp Chilies (crushed)

4 Cloves Crushed Garlic

1 tbsp Cinnamon

1 tbsp Thyme

1 tbsp Oregano

1 cup Water

Feta (to top)

Olive Oil (to top)


Directions:

 

First, as it is always first, preheat the oven to 375 F. Combine all ingredients into a bowl and mix. Except the water. Save the water. Add all of this to a baking dish and only now, add the cup of water on top.


Cover the dish with tin foil and bake at 375 F for 45 minutes.


After 45 miutes, remove the foil and cook for another 20-30 minutes until the potatoes are fork tender and the sauce has thickened.


That is seriously it. This is a great set it and forget it recipe for those nights you don't have a ton of time and just want something so savory and rich and just all around delicious. Serve hot and top with feta cheese and olive oil for that extra little umph.
